Coles Turnpike Tree Farm is owned and operated by Gary Coles. The name of the farm comes from the history of the land as the Catskill Turnpike Toll Road went through the property. This road was the major road west in the 1700’s and early 1800’s before the Erie Canal was built.
Each spring 2400 taps are drilled into Sugar Maple trees on the 400 acre farm. During late Feburary to first of April when the weather is right with freezing nights and warm days, the Maple sap flows from the trees to tanks in 20 miles of plastic tubing. The sap is boiled by oil fired evaporator to remove about 50 to 60 gallons of water to make 1 gallon of Pure Maple Syrup. Visitors are welcome at the sugarhouse during sugaring season in the spring.
